As a jailbreaker, you may remember a few years ago, the jailbreak tweak called Accent had been released by iOS developer Ivan Cristina, which was inspired by macOS and changed the iOS default accent color to macOS style. It allows customizing the Accent color system-wide, between a choice of some preset color. But the developer had not added a color picker for the tweak due to the tweak inspired by macOS style preset colors. However, since it has no further updates and we cannot choose the custom colors we want, iOS developer Lillie has released a jailbreak tweak called Accent Custom, allowing you to select a color of your choice and change the iOS default accent color.
Once installed, it adds an app icon on the Home Screen, and you can change the iOS accent color as you like.
As developer states, new things are added in later updates, such as app exclusion and enabled switch. Once you open the app, a color picker will pop up, and you can select a color there. Then, tap the Save button at the top right corner, and tap Done. It will change the iOS accent color system-wide.
